|                  |       Here in  Seattle, the mercury is approaching 90 degrees, which is pretty  unusual for us. Most of us don't have air-conditioning, as our  climate is generally a temperate one. So on hotter-than-usual days,  we have to cool down using other means: soup, for example. I'm  actually not suggesting hot soup, but some yummy chilled soups that  can help cool things down. I have a few I'd  like to share with  you this week, along with some other summer recipes.          |          |          Cucumber  Soup   Who says soup is only for fall and winter? You  can enjoy soup in summer too, especially if it's chilled, like this  refreshing cucumber soup.     
  |        Gazpacho   This is the perfect soup for a hot summer's day.  Gazpacho is a chilled soup featuring ripe tomatoes and a host of  other fresh garden vegetables. Serve with some crusty whole grain  bread.   
  |        Melon Mango  Soup   Here's a lovely orange-colored  soup of melon and mango, which is sweet and refreshing. Be sure to  use the ripest fruit you can, and don't forget to wash the melon and  mangoes before you cut into them. Although you don't eat the skin,  contaminants can get from the skin into the flesh of the fruit as you  cut into it.     
  |        Balsamic  Strawberries   What could be simpler? All you  need is pack of fresh strawberries, a little sugar and some aged  balsamic vinegar. Vinegar? Trust me, you won't taste "vinegar," but  you will enjoy delicious, sweet strawberries.
