Winter Soups
While we in the Pacific Northwest are enjoying an early spring, much of the United States remains in a deep freeze and likely in need of some warm soup! So for my snowbound readers, here is a selection of warm and comforting soups filled with plenty of healthy vegetables.

 

Winter Vegetable Soup
My favorite way to enjoy a vegetable-based soup is to puree it, making a velvety blend of goodness, without the need for cream or butter. While I use chicken broth in this soup, feel free to use a vegetable broth instead for a real vegetarian soup.
