Breakfast Stuffed Peppers

These simple, decadent peppers are stuffed with sausage, egg and cheese. You can swap out the sausage for bacon, or omit the meat altogether and load it up with additional veggies like chopped tomatoes and jalapenos. Serve with guacamole, sour cream, or just on their own!
